Creamy Tomato Soup
Well, the temperature today hovered around the minus 40 mark which meant it was one of those days where I did not leave the house. In fact, I didn’t even get dressed. I cleaned, watched some T.V, wrote, and made some soup! This DELICIOUS soup is comforting, easy, and you will most likely have all the ingredients in your pantry/fridge so you won’t have to leave your cozy home either!
Ingredients:
2 TBSP butter
1 onion, diced
2-28 oz cans of tomatoes
3 cloves of garlic
2 basil leaves
1/2 cup of cream
1 TBSP brown sugar
Dash of crushed chilli flakes
3/4 cups of vegetable broth
Kosher salt & ground pepper
For the grilled cheese croutons:
butter
sharp cheddar cheese
bread
Instructions:
Make a grilled cheese and chop into pieces… if you’re not sure how to make one youtube it! Once your sandwich is done (the cheese is melted and the bread is golden), cut it into cubes and set aside.
Heat butter in a large stock pot. Add onions, garlic, chilli flakes, and basil stirring occasionally until onions are translucent.
Stir in tomatoes (if you use whole canned tomatoes mash them up), add cream and brown sugar. Bring to a boil, reduce to a simmer and allow it to thicken slightly. Add a pinch of kosher salt and fresh ground pepper.
Move soup to a food processor and blend. Stir in vegetable broth and heat throughout!
Serve immediately. Don’t forget to add the grilled cheese croutons and garnish with fresh basil if you have!
Voila! Quick, easy, and oh so delicious… you will never buy canned tomato soup again!
