BBQ Chicken Pizza
This beautiful weather has B and I wanting to BBQ everything! It smells divine, doesn’t heat up the house, and there’s way less mess to clean…what’s not to love?! A couple weeks ago we made this BBQ chicken pizza recipe that my beautiful friend Kim shared with me. Now I see why she did, it’s too good not to! So, here it is:
Dough
Mix
- 1 cup warm water
- 1 tsp sugar
- 1 tbsp yeast
Set aside and let yeast activate. (You will know it’s done when there is a thick layer of foam on top of the water)
In large bowl, combine:
- 2 cups of flour
- 3/4 tsp of salt
- 2 tsp sugar
- 2 tbsp oil
Add the activated yeast mix to the bowl. Mix and knead until flour and all ingredients are combined. If dough is too sticky just add more flour!
Cover and let rise for at least 30 minutes. I like to find a warm spot in the house where the sun shines on it or in front of the fireplace if you have.
Once dough has risen roll it out into your preferred shape and thickness. Transfer the dough to a floured pan – this is so you can slide it onto the BBQ. Lightly brush the grill with oil. Slide the dough onto the grill. Cook one side until golden brown. Remove from the grill and add your toppings in the following order:
Toppings
- Pizza Sauce
- Spinach
- Chicken – I am usually lazy and buy the roasted rotisserie chicken from the store. Pull it off the bone and then toss it in your favorite BBQ sauce.
- Mozzarella Cheese
- Purple Onion
- Corn
- Fresh Garlic
- BBQ sauce -If the sauce is super thick, add a touch of warm water so you can easily drizzle the sauce over your pizza.
Return the pizza to the grill until toppings are cooked and cheese is melted.
Voila!… Oh wait, don’t forget to serve with an ice cold soda!
