Kale Caesar Salad
With summer right around the corner I thought I would share one of my favorite salads. This recipe is adapted from one of my favorite bloggers, Jillian Harris (she’s seriously the cutest!!) The homemade dressing, the crisp kale, and thick cut bacon… I mean what’s not to love!? A perfect addition to your summer BBQ!
(Makes 2-3 servings)
You’ll need:
1/4 cup Olive oil
1 tbsp White wine vinegar
2 tsp Dijon mustard
1 tsp Anchovy paste
1/2 tsp Worcestershire
2 Cloves garlic minced
2 tbsp Grated parm
2 tbsp Miracle Whip
1 full lemon squeezed (or more)
A generous amount of course fresh ground pepper
Dressing: Mix ingredients together adding the vinegar and lemon juice last. This way you’re able to adjust accordingly… I like a bit of zip so I often add a little extra lemon. Chill in the refrigerator until ready to be served.
Kale: This salad must be made with Kale!!! You may be tempted to do romaine if you’re not a huge fan of Kale but don’t! I almost did and I’m so happy I didn’t! Remove the leaves from the stem & wash.
Croutons: Take a loaf of French bread and tear it into crouton size pieces. Sprinkle with a little EVOO and season with salt, pepper, and any other spices you’d like. Bake until golden brown.
Bacon: The uncut stuff works best. Cut it into cubes and fry until crisp.
Toss is altogether, top it off with a generous amount of fresh parm, add a little squeeze of lemon juice for good measure and voila! A healthier alternative to the typical caesar salad!
