				<content:encoded><![CDATA[<p>&#8220;Hmmm, what am I going to make for dinner tonight?&#8221; Hands up if you ask yourself this daily&#8230; yup, me too! As much as I want to be one of those people who meal preps on Sunday and has a layout of what I am going to eat all week, I&#8217;m just not. If you are, kuddos to you, that&#8217;s amazing!  I&#8217;ve tried many times and I just can&#8217;t seem to follow through with it&#8230; I&#8217;m just not a meal prep kinda gal.  Maybe it will be my 2020 resolution but until then I thought I would share my current favourite go-to dinner recipes.  These are recipes I have been making for years and continually fall back on when I just don&#8217;t know what to make.  They are tried, tested, and true!</p>
<p>1.) <a href="https://thepioneerwoman.com/cooking/sunday-frittata/" target="_blank" rel="noopener">Frittata</a>&#8211; This is the newest recipe on the list, but in the last year I can say I have made frittata easily 10 times!  I&#8217;ve always loved eggs.  When I first moved out and was living that single life, adjusting to cooking for one, I LIVED on eggs. Boiled, scrambled, fried, and if I was feeling spicy, FRITTATA!  Some people go crazy and party like they&#8217;re 19 again and experiment doing lord knows what when they are newly single.  Nope not me, I experimented with eggs and let me tell you it paid off. I can make a mean frittata&#8230; even saying it is fun! Haha!<br />
I can&#8217;t take all the credit though.  I owe it all to The Pioneer Women.  I started by following <a href="https://thepioneerwoman.com/cooking/sunday-frittata/" target="_blank" rel="noopener">this recipe</a> and then adjusted to my liking (as always) after.  After following her recipe (which is amazing btw) a few times I got brave and basically just started throwing whatever vegetables I had in my fridge that needed to be used up and it always turned out!  If I haven&#8217;t already convinced you that you need to start making more frittatas this will:<br />
&#8211; the leftovers make the best breakfast for you and your family<br />
-it uses up all those veggies that you&#8217;ve been feeling bad about letting go rotten<br />

<p>2.) <a href="https://damndelicious.net/2014/12/31/lemon-butter-chicken/" target="_blank" rel="noopener">Lemon Butter Chicken</a>&#8211; this has been a favourite of mine for years.  It&#8217;s easy, delicious, and the ingredients are super simple.  I would suggest doubling the sauce recipe, it&#8217;s so good you&#8217;ll literally want to drink it or put it on top of your rice&#8230; whatever floats your boat. This recipe is from one of all time favourite food bloggers, <a href="https://damndelicious.net/" target="_blank" rel="noopener">Damn Delicious</a>! I have been making recipes from her blog for years now and it is rare she puts out a bad one.  If you haven&#8217;t heard of her I would highly suggest you try a few of her recipes!<br />

<p>3.) <a href="https://teachmestyle.com/food/mexican-quinoa/" target="_blank" rel="noopener">Mexican Quinoa</a> &#8211; this isn&#8217;t the first time I&#8217;ve talked about this dish on TMS.  The recipe is actually published on here!  I am not sure where/when or how I originally came up with the idea but I do know that it originally had rice instead of quinoa and trust me it is much better with quinoa and it&#8217;s healthier, too!  This is a throw everything in one pot kinda deal which let&#8217;s be honest is the best kind of deal!  It&#8217;s spicy, filling, and freezes well making it perfect for lunches.  I make this at least once a month and then freeze the leftovers into individual containers.   It&#8217;s perfect for those days when I&#8217;m running out the door and forgot to pack my lunch the night before.</p>
<p>4.) <a href="https://www.jillianharris.com/food-friday-captains-top-secret-kale-caesar-salad/" target="_blank" rel="noopener">Kale Caesar Salad</a> &#8211; this is from my all time favourite blogger, <a href="https://www.jillianharris.com/" target="_blank" rel="noopener">Jillian Harris&#8217;</a> blog.  I like caesar salad but I LOVE this kale caesar salad! It is SO good.  What&#8217;s different you ask?  I&#8217;m not sure if it&#8217;s the fresh crunchy kale, the lemony dressing, the homemade croutons, or the combination of them all&#8230; but whatever it is, it&#8217;s delicious!  She has since recreated the recipe to make it vegan friendly so if you&#8217;re plant based or being more conscious of that, <a href="https://www.jillianharris.com/captains-plant-based-kale-caesar-salad-recipe/" target="_blank" rel="noopener">here</a> is the vegan version.<br />

<p>5.) <a href="https://teachmestyle.com/featured/tortilla-soup/" target="_blank" rel="noopener">Tortilla Soup</a> &#8211; I grew up on homemade soup so I will admit I am a bit of a snob when it comes to them.  You can thank my wonderful parents for that&#8230; yes, my mom and dad both love making soups, how lucky am I?  We rarely (if ever) had soup from the can.  After trying several different tortilla soup recipes I created my own version and I must say it is pretty damn tasty.   It&#8217;s packed with flavour and has delicious toppings that take it from amazing to FREAKING AWESOME real quick. Make a big batch on Sunday and it&#8217;s perfect for lunch during the long cold winters!<br />
