Sundays are where I organize our meals. I don’t meal prep in the traditional way of cooking a bunch of meals and putting them in the fridge for myself and Lee to grab for dinner and lunch. Instead, I peruse different websites and find what I want to make for the week and make sure we have the ingredients for said meals. The odd time I will prep a sauce or something like that but typically I just make sure I have the ingredients on hand… lol that is enough prep in my mind. I will typically try to cook things that have the same ingredients to help with food waste and it has been going really great. The kids on the other hand, that is where I like to meal prep and have things that are quick and ready to go. They typically eat what we eat but there are days we are eating things that are spicy so I do like to have meals ready to go. We are also sticklers for a whole foods and nutritional breakfast. No cereal or pop tarts in this house. Again, no judgement it’s just never been something we have never fed our kids so they don’t ask for it. The other day when I shared on IG a few things I prep for my kids I had a couple of you asking for the recipes and although I more of a guessapee girl, I will try my best to put them writing for you! Some are my own and some are taken from other websites… I will share below:

Breakfast: This is not alway the same but typically we always have eggs prepared in some way for breakfast. This has been our go to lately! We call them rainbow egg muffins and the kids love them!

Rainbow Egg Muffins
+2 ripe bananas (fresh works best)
+5 eggs
+berries

Smash the bananas, add in the eggs, mix together, pour into muffin tin! I prefer these silicon ones. Make sure you oil these well they like to stick!
Bake at 350 for 20-25 minutes. You will know when they’re done, just touch the middle and if they’re solid they’re good to go!

Lunch: We ALWAYS have a batch of Hulk Mac + Cheeses in the freezer! The kids have always loved them but Dane is especially loving them now that he is a Hulk fan! This is just a fun spin on mac and cheese but it’s PACKED with goodness! You can find the recipe here! I make a big batch and then freeze them in these containers. They are super handy. They’re on the pricy side but trust me they’re worth it!

Dinner: This week I tried a new chicken nugget recipe and the kids really loved them! I can’t take credit for this recipe- I will link it here! I made a double batch, flash froze them on my cookie sheet and then popped them in a ziplock bag.  I just throw them in the air fryer and they’re perfect for dinner! If you kids like dipping their nuggets, try mixing a olive oil mayo and honey (make sure you baby is over a year if you’re serving honey) it is a delicious healthy alternative to ketchup. Whip up some rice, and throw some veggies or sweet potato fries in the air fryer and you’re good to go.

Snacks:
MUFFINS! What kids doesn’t love muffins?! We have a few that we rotate between week by week but lately we have really been loving these ABC Muffins! Again, I cannot take credit for this recipe either- here is the link for the recipe!

Fruits + Veggies: this is not ground breaking but I swear if you wash, chop, and store your fruit and veg so it is ready to grab and go you (and your kids) will eat it and lots of it. I always have this container full of a variety of fruits and veggies and usually restock it 2-3 times a week. If you don’t have a container like this yet, I HIGHLY suggest it. It is perfect in the summer for beach days, picnics, or even in the car for road trips. I haven’t had it in the cupboard since I purchased it, it is always being used.

This past week has been a busy and exciting! Halo started solids which is absolutely WILD to me! It legitimately feels like she was born two months ago and yet here we are, eating avocado! We are doing baby lead weaning with her, we did the same with Dane, and I really enjoyed the process.  I know there are some parents out there who don’t particularly love this stage but I really do. I welcome the mess and throwing food!

What I Cooked/Ate:

I made a few new recipes this week and they were all really great and would definitely make them again. I have always really loved Hello Fresh and although I haven’t ordered them in a while (I’m thinking of doing it again) I do often pull up their recipes and make them at home. I happened to have all the ingredients for this gnocchi recipe (don’t you love when that happens) and so I threw it together and let me tell you it was SO good and it took 15 minutes. The longest part was frying the Italian sausage.  I will be adding this to my rotation for sure. I also had some asparagus that I found in the back of my fridge that was looking at little haggard, refusing to throw it out, I hit up Pinterest to find a cream of asparagus soup recipe. Typically when it comes to soup I just throw stuff together and very rarely follow a recipe but I haven’t made asparagus in a long time so I needed a little refresher. I ended up finding this one, a super basic/ easy recipe that turned out incredibly delicious… I bought asparagus again and will be making it again next week!  I also got to try Inspired Go this week! I have been wanting to try it forever but just never have. My sister was heading out of town and had one left that she didn’t want to go bad so she gave it to me. It was the chopped salad and well, I have since placed a large order for next week! It was so good, I’m hooked!

What I’m loving;

Nerd Gummy Clusters… I am addicted. I can’t stop with them they are my guilty pleasure these days.  They’re hard to come by but you can get sometimes find them at Walmart and London Drugs. I’m also loving my Joe Fresh platform rain boots they have been so perfect for heading out with Dane.

On Monday I popped into Superstore for bananas and left with an entire new Spring wardrobe… I kid you not. Joe Fresh hit it out of the park this season. I’m not going to lie, I don’t always love their stuff, I find it to be very hit or miss but this season they nailed it.  Check this reel out to see how I style all the goodies I picked up. *this exact sweater dress is sold out but could be recreated with any sweater dress you have in your closet. I have also linked a more casual one that I think would be really cute. As for a button down, I suggest hitting up the mens section at a thrift store- these are perfect for layering! In my opinion, it’s the details that make this outfit- the socks, bow in my hair, and the shoulder bag!

*Let’s give these Ganni dupes a moment shall we!? They are seriously perfection. The best dupe I’ve scored in a long time. To be honest, I didn’t have high hopes when I placed the order but I decided to give them a shot considering the Ganni ones are $495!!! These are $99 and worth every penny in my opinion. I am wearing a size 7, I would say they fit true to size. These are the IT shoe of the Spring stay tuned to see how I style them!

For those of you wondering if this is the Amazon dupe and wanting a review. It’s not… I placed the order and it NEVER showed up. They eventually refunded me but talk about annoying. I have linked the exact one I have here. It’s definitely on the pricey side but I have gotten my money’s worth for sure- I wear it as a set lots as I like that it is a change from my typical sweatsuit, but I also wear the cardigan with jeans and love it styled that way! I am wearing a size S.

What I made:
Lately I haven’t been good at eating lunch. I’ve been having PB&J sandwiches non stop,  so I decided to make a big batch of this Mediterranean Pasta Salad to keep in the fridge for Lee and I to grab for lunch. It was really delicious and great to make ahead! My only suggestion would be to cut the dressing recipe in half I felt like there was SO much dressing leftover.

I was craving cookies the other night so instead of going to bed at a normal hour I decided to  stay up and make my besties Butterfinger cookies… dear lord. They are unbelievable. I am warning you right now you will want to eat the ENTIRE batch.

What I Tried:

I got a PR gift from L’oreal – the new Panorama mascara. I was hesitant to try it as I am a TOK Beauty fan but your girl has a job to do, so I tried it and it’s actually very good. Like very very good. It doesn’t flake, it gives you crazy volume and it’s buildable. I will still continue to use TOK beauty for the majority of the time because it actually nourishes my lashes and helps them grow (mine have been falling out since having Halo) but I will say this stuff is really good.

As for the kids, Halo is sleeping like an absolute angel thanks to our sleep trainer (stay tuned for a blog post on that) and Dane is coming down with a bit of a cold which is extremely stressful because of his Nephrotic Syndrome. We will be monitoring closely, helping him get lost of rest, and testing to see if this will cause a relapse for him. Prayers for my little man would be so appreciated.
