				<content:encoded><![CDATA[<p>I am very much torn between wanting to be a stay at home mom/ trad wife and a boss ass bitch crushing goals and making stacks&#8230; lol anyone else? Because I&#8217;m torn I allow myself one day to be that trad wife and make allll the homemade nourishing food for my littles. If KD or Annies is more your style, there is absolutely no judgement here but that&#8217;s not for me. My love language is definitely food. You know your grandma that just always wants (wanted) you to eat&#8230; that is me.</p>
<p>Sundays are where I organize our meals. I don&#8217;t meal prep in the traditional way of cooking a bunch of meals and putting them in the fridge for myself and Lee to grab for dinner and lunch. Instead, I peruse different websites and find what I want to make for the week and make sure we have the ingredients for said meals. The odd time I will prep a sauce or something like that but typically I just make sure I have the ingredients on hand&#8230; lol that is enough prep in my mind. I will typically try to cook things that have the same ingredients to help with food waste and it has been going really great. The kids on the other hand, that is where I like to meal prep and have things that are quick and ready to go. They typically eat what we eat but there are days we are eating things that are spicy so I do like to have meals ready to go. We are also sticklers for a whole foods and nutritional breakfast. No cereal or pop tarts in this house. Again, no judgement it&#8217;s just never been something we have never fed our kids so they don&#8217;t ask for it. The other day when I shared on IG a few things I prep for my kids I had a couple of you asking for the recipes and although I more of a guessapee girl, I will try my best to put them writing for you! Some are my own and some are taken from other websites&#8230; I will share below:</p>
<p>Breakfast: This is not alway the same but typically we always have eggs prepared in some way for breakfast. This has been our go to lately! We call them rainbow egg muffins and the kids love them!</p>
<p>Rainbow Egg Muffins<br />
+2 ripe bananas (fresh works best)<br />
+5 eggs<br />
+berries</p>
<p>Smash the bananas, add in the eggs, mix together, pour into muffin tin! I prefer these silicon ones. Make sure you oil these well they like to stick!<br />
Bake at 350 for 20-25 minutes. You will know when they&#8217;re done, just touch the middle and if they&#8217;re solid they&#8217;re good to go!</p>
<p>Lunch: We ALWAYS have a batch of Hulk Mac + Cheeses in the freezer! The kids have always loved them but Dane is especially loving them now that he is a Hulk fan! This is just a fun spin on mac and cheese but it&#8217;s PACKED with goodness! You can find the recipe <a href="https://teachmestyle.com/featured/hulk-mac-and-cheese/" target="_blank" rel="noopener">here!</a> I make a big batch and then freeze them in <a href="https://amzlink.to/az0mCjMDnSlyW" target="_blank" rel="noopener">these containers</a>. They are super handy. They&#8217;re on the pricy side but trust me they&#8217;re worth it!</p>
<p>Dinner: This week I tried a new <a href="https://eatwellwithlex.com/homemade-air-fryer-chicken-nuggets/" target="_blank" rel="noopener">chicken nugget recipe</a> and the kids really loved them! I can&#8217;t take credit for this recipe- I will link it here! I made a double batch, flash froze them on my cookie sheet and then popped them in a ziplock bag.  I just throw them in the air fryer and they&#8217;re perfect for dinner! If you kids like dipping their nuggets, try mixing a olive oil mayo and honey (make sure you baby is over a year if you&#8217;re serving honey) it is a delicious healthy alternative to ketchup. Whip up some rice, and throw some veggies or sweet potato fries in the air fryer and you&#8217;re good to go.</p>
<p>Snacks:<br />
MUFFINS! What kids doesn&#8217;t love muffins?! We have a few that we rotate between week by week but lately we have really been loving these ABC Muffins! Again, I cannot take credit for this recipe either- here is the <a href="https://www.yummytoddlerfood.com/baby-muffins/" target="_blank" rel="noopener">link</a> for the recipe!</p>
<p>Fruits + Veggies: this is not ground breaking but I swear if you wash, chop, and store your fruit and veg so it is ready to grab and go you (and your kids) will eat it and lots of it. I always have this container full of a variety of fruits and veggies and usually restock it 2-3 times a week. If you don&#8217;t have a <a href="https://amzlink.to/az0ujf4VwTGes" target="_blank" rel="noopener">container like this yet</a>, I HIGHLY suggest it. It is perfect in the summer for beach days, picnics, or even in the car for road trips. I haven&#8217;t had it in the cupboard since I purchased it, it is always being used.</p>

				<content:encoded><![CDATA[<p>I hoped we&#8217;d never get here but Dane has entered his &#8220;I don&#8217;t like that&#8221; era. Thankfully he is still obsessed with noodles. This quick and easy recipe is packed with nutrients, it&#8217;s delicious, and the best part is it freezes well which makes it perfect for quick meals when you&#8217;ve prepared nothing else! I will share the recipe below but be don&#8217;t be afraid to be creative with it. Essentially just make the base sauce and then add in your veggie of choice! I would stick with veggies that have a more bland flavour and are masked or combine well with the cheese flavour. I&#8217;ve used steamed butternut squash (this one works really well as it&#8217;s orange they have no idea there is anything else in the mac and cheese), zucchini, and broccoli (you can taste this one but it pairs nicely with the cheese and my son enjoys broccoli, well he does for now anyways lol). <p>You&#8217;ll Need:</p>
<ul>
<li>2 TBSP unsalted butter</li>
<li>1/4 milk of your choice (I&#8217;ve used whole milk, almond, and oat and all have turned out)</li>
<li>1 TBSP flour</li>
<li>cheese of your choice (I&#8217;ve used mozzerella, chedder, cottage cheese, laughing cow, even a mixture of a few different kinds and they all turn out great! Use whatever you have in the fridge)</li>
<li>handful of fresh or frozen spinach *or any steamed veggies you want to use</li>
<li>half cup of steamed cauliflower</li>
<li>pasta *bonus points for a fun shape &#8211; Winners always has fun seasonal stuff!</li>
<li>2 TBSP nutritional yeast &#8211;</li>
</ul>
<p>** none of these need to be exact measurements. If you feel the sauce is too thick, add more milk, etc.</p>
<p>Directions:</p>
<ul>
<li>Boil water for pasta</li>
<li>Steam cauliflower and set aside</li>
<li>Melt butter in saucepan</li>
<li>Add flour and stir until it makes a paste</li>
<li>Add in milk of choice. If it is too thick, add a little more milk.</li>
<li>Stir in cheese. Don&#8217;t worry if it is lumpy and not fully melted. You are going to blend this so the lumps will go away during that process.</li>
<li>at this point your water is likely boiling, add the pasta in and cook</li>
<li>add sauce, cauliflower, spinach and nutritional yeast to high speed blender. If the sauce is too thick, just add more milk.</li>
<li>poor sauce over pasta and combine.</li>
<li>serve immediately or divide into portion container and freeze for quick and easy lunches/dinners!</li>
</ul>

<p>Notes:</p>
<p>*I often have pasta sauce leftover- make sure to freeze it, again, its great for whipping up a last minute lunch or dinner.<br />
* The nutritional yeast is optional but is packed with vitamin B, has protein in it as well as other minerals that can help boost immunity! It has a nice cheesy umami flavour that pairs beautifully with the sauce so much so your toddler won&#8217;t even know it&#8217;s in there!<br />
* If your child is on a low sodium diet, look for no sodium dry cottage cheese! I have found it at Walmart. It melts beautifully and gives that creamy texture.<br />
* These <a href="https://rstyle.me/+rV_Zehlk54m8PrKwcpo0_A" target="_blank" rel="noopener">storage containers</a> are perfect for meal prepping this pasta. They are silicone which makes it super easy to pop out and reheat!</p>
