Once we have filled up on mimosas, coffee, and my famous (well I’ve claimed it to be famous) breakfast casserole, we usually hit up the greenhouses.  Our day is typically pretty casual focussing on the important things: big laughs, good food, and being together!

I’m not sure how you’re celebrating your mom or motherly figure this year but if you’re hosting a brunch I highly suggest this casserole! My lovely friend, Erin suggested I make it last year when I told her I was hosting a big crew of women for brunch.  It is EASY, quick, super delicious, and has now become a tradition, thanks Erin!

INGREDIENTS:

• 8 plain croissants
•  2 tablespoon butter
• 4 cups sliced fresh mushrooms
• 1/2 cup sliced green onion
• 8 eggs
• 2 cup milk
• 2 cup shredded swiss cheese
• 2 cup shredded mozzarella cheese
• 1/2 cup parmesan cheese

DIRECTIONS

Split croissants in half and place bottoms cut side up in one layer in a casserole dish.
Melt the butter in a frying pan.
Saute mushrooms and onions until tender and the liquid has evaporated. Set aside.
Beat together the eggs and milk.
Pour over half croissants, layer mushroom mixture and cheese on top, them pour the remaining liquid over top.
Position croissant tops over the bottoms.
Let stand over night in the fridge- don’t skip this step!!!
Bake at 350* F for 30 to 45 minutes or until set.
