Sunday Stacks

Sundays are for sleeping in, lounging in your pj’s all day, and eating the best breakfast ever… pancakes! A good stack of pancakes on a Sunday morning can be the perfect start to your day.  My favourite part of this recipe? It has regular milk instead of buttermilk…I NEVER have buttermilk on hand and going to the store on a Sunday morning is just out of the question.

Ingredients:

  • 1 1/2 cups of all-purpose flour
  • 3 1/2 tsp baking powder
  • 1 tsp salt
  • 1 tbsp white sugar
  • 1 1/4 cups milk
  • 1 egg
  • 3 tbsp butter, melted

Instructions:

In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.

Let sit for about 10 minutes before frying. You will start to see bubbles form in the batter… this is not a necessary step but will make your pancakes even fluffier!

Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
